Shaved Brussels Sprouts with AUTUMNCRISP® Grape, Herb and Goats Chevre.
Prep time: 20 minutes l Cook time 15 mins l Serves 4-6
Ingredients:
300g Brussels sprouts, shaved. With mandoline if preferred.
80 ml olive oil
40 ml red wine vinegar
2 teaspoons dijon mustard
⅓ cup roughly chopped pistachios
4 tablespoons finely sliced chives
3 tablespoons finely chopped mint
⅓ cup pepitas
1 cup AUTUMNCRISP® grapes, halved
1 lemon, zest and juice
100g goats chevre
Salt and pepper to taste
Method:
1. In a small bowl add olive oil, red wine vinegar, mustard and season. Whisk well and set aside.
2. In a large bowl add brussels sprouts, pour over the dressing. Mix well to combine.
3. Add pistachios, chives, mint, pepitas, grapes, lemon zest, goats chevre cheese and toss through.
4. Tip into a serving bowl. Add lemon juice and a drizzle of olive oil. Season to taste and serve.
